    APPETIZERS: Gazpacho Dip

    List of Ingredients




    2 cans petite diced tomatoes
    1 can diced black olives
    1 bunch green onions, chopped including part of the green
    salt and pepper
    minced garlic cloves
    extra virgin olive oil
    apple cider vinegar

    Recipe



    Combine all ingredients.
    Oil, vinegar, salt and pepper are adjusted to your taste.
    I usually start with 3 Tbls of each of the oil and vinegar.
    Adjust until it meets with your taste buds and chill.
    Stir ocasionally
    Serve with tortilla chips.
    Can easily be doubled or tripled.
