APPETIZERS: Shrimp Cheesecake

Recipe Introduction
Note: I usually make a circle around the outside of the top of chopped onions and then an inner circle of sliced black olives. Then sprinkle Old Bay seasoning in the center.
List of Ingredients
- 1 cup crushed Ritz Crackers
- 3 Tbls. melted butter
- 2 (8oz ea) cream cheese, softened
- 3/4 cup sour cream; divided
- 3 eggs
- 2 tsp. grated red onion
- 1 tsp. lemon juice
- 2 Tbls. Old Bay Seasoning
- 2-3 drops tabasco
- 1/8 tsp pepper
- 1 cup bay shrimp
Instructions
- Mix cracker crumbs and butter. Pat into bottom of a greased 9" springform pan.
- Bake @ 350 degrees for 10 minutes. Cool on a wire rack as you make the filling.
- Reduce heat to 325 degrees.
- In a mixing bowl, combine the cream cheese and 1/4 cup sour cream until smooth.
- Add eggs, and beat on low till just combined.
- Add onion, lemon juice and seasonings and beat until blended. Fold in the shrimp.
- Pour over the crust and bake 35-40 minutes until center is et.
- Cool on a wire rack fo 10 minutes. Run a sharp knofe around the edges to loosen.
- Cool for an hour and spread remaining sour cream over top.
- Refrigereate overnight, then remove from the pan. Let come to room temperature about 30 minutes before serving.
- Serve with crackers and cut into wedges as a spread.
