    APPETIZERS: Shrimp Cheesecake

    Note: I usually make a circle around the outside of the top of chopped onions and then an inner circle of sliced black olives. Then sprinkle Old Bay seasoning in the center.


    List of Ingredients


    • 1 cup crushed Ritz Crackers
    • 3 Tbls. melted butter
    • 2 (8oz ea) cream cheese, softened
    • 3/4 cup sour cream; divided
    • 3 eggs
    • 2 tsp. grated red onion
    • 1 tsp. lemon juice
    • 2 Tbls. Old Bay Seasoning
    • 2-3 drops tabasco
    • 1/8 tsp pepper
    • 1 cup bay shrimp


    Instructions


    1. Mix cracker crumbs and butter. Pat into bottom of a greased 9" springform pan.
    2. Bake @ 350 degrees for 10 minutes. Cool on a wire rack as you make the filling.
    3. Reduce heat to 325 degrees.
    4. In a mixing bowl, combine the cream cheese and 1/4 cup sour cream until smooth.
    5. Add eggs, and beat on low till just combined.
    6. Add onion, lemon juice and seasonings and beat until blended. Fold in the shrimp.
    7. Pour over the crust and bake 35-40 minutes until center is et.
    8. Cool on a wire rack fo 10 minutes. Run a sharp knofe around the edges to loosen.
    9. Cool for an hour and spread remaining sour cream over top.
    10. Refrigereate overnight, then remove from the pan. Let come to room temperature about 30 minutes before serving.
    11. Serve with crackers and cut into wedges as a spread.
