    CANDY: Peanut Butter Balls

    List of Ingredients




    BALLS:
    2 lbs powdered sugar
    2 sticks butter, softened
    2 cups peanut butter (I use Jif)
    4 cups Rice Krispies

    COATING:
    2-3 Tbls. shortening
    1 12oz bag semi-sweet Chocolate Chips
    1 12oz bag Butterscotch Chips

    BALLS:
    Combine all ingredients in a large mixing bowl and knead together with clean hands until well combined.
    Form into 1 - 1/2" balls, placing on a cookie sheet lined with waxed paper.
    Place cookie sheet in the freezer, leaving for several hours or over night.

    COATING:
    Melt both bags of chipstogether in a double boiler or micro-wave.
    Add shortening 1 Tbls. at a time until mixture is of dipping consistancy. (I use about 2-3 heaping Tbls)
    Dip frozen balls in coating mixture and shake off excess coating.
    Place again on waxed paper lined cookie sheets and return to freezer to set.
    This recipe makes 100 or so peanut butter balls.
