    COOKIES: Double Chocolate Coconut Cookie

    List of Ingredients


    • 1 cup (2 sticks) unsalted butter (soft)
    • 1/2 cup sugar
    • 3/4 cup packed light brown sugar
    • 2 large eggs
    • 1 tsp. pure vanilla
    • 1 3/4 cup all purpose flour
    • 1/4 cup unsweetened dutch process cocoa powder
    • 1 tsp baking soda
    • 1/2 tsp. baking powder
    • 1/2 tsp. coarse salt
    • 2 cups white chocolate chunks ( 9oz)
    • 1 3/4 cups sweetened coconut flakes
    • 1 3/4 cups coarsley chopped walnuts


    Instructions


    1. Preheat oven to 350 degrees.
    2. Put butter and sugars in the bowl of an electric mixer with a paddle attachement; mix on medium speed until smooth, about 2 minutes.
    3. Mix in eggs, one at a time. Stir in the vanilla
    4. Sift flour, cocoa powder, baking soda, baking powder and salt into a bowl. Blend into the butter mixture at low speed until well blended.
    5. Stir in chocolate chunks,coconut, and walnuts.
    6. Using a 1 1/2" scoop, drop batter onto baking sheet sheets lined with parchment paper, spacing 2' apart.
    7. Flatter slightly. Bake until set 10-12 minutes.
    8. Let cool on sheets for 2 minutes.
    9. Transfer cookies to racks to cool completely. Cookies can be stored in airtight containers at room temperature up to 1 week.
