COOKIES: Double Chocolate Coconut Cookie

- 1 cup (2 sticks) unsalted butter (soft)
- 1/2 cup sugar
- 3/4 cup packed light brown sugar
- 2 large eggs
- 1 tsp. pure vanilla
- 1 3/4 cup all purpose flour
- 1/4 cup unsweetened dutch process cocoa powder
- 1 tsp baking soda
- 1/2 tsp. baking powder
- 1/2 tsp. coarse salt
- 2 cups white chocolate chunks ( 9oz)
- 1 3/4 cups sweetened coconut flakes
- 1 3/4 cups coarsley chopped walnuts
Instructions
- Preheat oven to 350 degrees.
- Put butter and sugars in the bowl of an electric mixer with a paddle attachement; mix on medium speed until smooth, about 2 minutes.
- Mix in eggs, one at a time. Stir in the vanilla
- Sift flour, cocoa powder, baking soda, baking powder and salt into a bowl. Blend into the butter mixture at low speed until well blended.
- Stir in chocolate chunks,coconut, and walnuts.
- Using a 1 1/2" scoop, drop batter onto baking sheet sheets lined with parchment paper, spacing 2' apart.
- Flatter slightly. Bake until set 10-12 minutes.
- Let cool on sheets for 2 minutes.
- Transfer cookies to racks to cool completely. Cookies can be stored in airtight containers at room temperature up to 1 week.
