    COOKIES: Raspberry Nut Pinwhels

    List of Ingredients


    • 1/2 cup butter (no subs) softened
    • 1 cup sugar
    • 1 egg
    • 1 tsp. vanilla extract
    • 2 cups flour
    • 1 tsp baking powder
    • 1/4 cup seedless raspberry jam
    • 3/4 cup finely chopped walnuts


    Instructions


    1. In a mixing bowl, cream butter and sugar.
    2. Beat in eggs and vanilla
    3. Combine the flour and baking powder; gradually add to the creamed mixture.
    4. Roll out dough between waxed paper into a 12" square.
    5. Remove top pieces of waxed paper.
    6. Spread dough with jam and sprinkle with nuts.
    7. Roll up tightly jelly-roll style, starting with a long side; wrap in plastic wrap..
    8. Refrigerate for 2 hours or until firm.
    9. Unwrap dough and cut into 1/4" slices.
    10. Place 2" apart on ungreased baking sheets.
    11. Bake at 375 degrees for 9-12 minutes or until edges are lightly brown.
    12. Remove to wire racks to cool.
    13. Makes 3 1/2 dozen
