COOKIES: Raspberry Nut Pinwhels

- 1/2 cup butter (no subs) softened
- 1 cup sugar
- 1 egg
- 1 tsp. vanilla extract
- 2 cups flour
- 1 tsp baking powder
- 1/4 cup seedless raspberry jam
- 3/4 cup finely chopped walnuts
Instructions
- In a mixing bowl, cream butter and sugar.
- Beat in eggs and vanilla
- Combine the flour and baking powder; gradually add to the creamed mixture.
- Roll out dough between waxed paper into a 12" square.
- Remove top pieces of waxed paper.
- Spread dough with jam and sprinkle with nuts.
- Roll up tightly jelly-roll style, starting with a long side; wrap in plastic wrap..
- Refrigerate for 2 hours or until firm.
- Unwrap dough and cut into 1/4" slices.
- Place 2" apart on ungreased baking sheets.
- Bake at 375 degrees for 9-12 minutes or until edges are lightly brown.
- Remove to wire racks to cool.
- Makes 3 1/2 dozen
