DESSERTS: Peppermint Ice Cream Dessert

- 28 Oreos
- 1/2 cup melted butter
- 1/2 gallon peppermint ice cream
- FUDGE TOPPING:
- 2 cups powdered sugar
- 2/3 cups semi sweet chocolate chips
- 1 cup evaporated milk
- 1/2 cup butter
- 1 tsp. vanilla
- Optional:
- Cool Whip
- Crushed peppermint candies
Instructions
- Crush Oreos and mix with melted butter. Press into a 9" springform pan. Freeze for 1 hour.
- Soften ice cream. Spread over the crust and freeze until hard, overnight is best.
- Make the fudge topping by combining the powdered sugar, chocolate chips, milk and butter in a sauce pan.
- Bring to a boil and cook for 8 minutes, stirring constantly.
- Remove from heat and add the vanilla.
- To serve, remove from pan and cut into wedges, drizzle with fudge sauce and top with Cool Whip and crushed peppermint.
