MAIN DISHES: Chicken Enchiladas

- 1 lb chicken breast - cooked & shredded
- 2 cups shredded cheddar cheese
- 1 pkg Liptons Spanish Rice - prepared according to instructions
- 1 can hot enchilada sauce
- 1 can mild enchilada sauce
- 1 can cream of chicken soup
- 8 oz. sour cream
- 12 flour tortillas
Instructions
- In a large bowl, combine the chicken, 1 cup cheese and rice.
- In another bowl combine the sauces, soup and sour cream, stirring until well blended.
- Add enough of this mixture to the chicken to kake it creamy, usually about 1/2.
- Spoon chicken mix on to tortilla shells and roll up.
- Place, seam side down in a greases 9x13 pan.
- Pour remaining sauce over the enchiladas & bake at 375 degrees until warmed through and bubbly.
- Sprinkle with remainig cheese and return to the oven until cheese melts.
- Sewrve with additional sour cream, cheese and lettuce.
