    SALADS: Bean Corn and Cilantro Salad

    List of Ingredients


    • 1 Tbls. dijon mustard
    • 3 Tbls. red wine vinegar
    • 1/4 cup olive oil
    • salt, pepper, cayenne and chili powder to taste
    • 3 scallions, diced
    • 1 red bell pepper diced
    • 1 can black beans, drained and rinsed
    • 1 can corn
    • handful of cilantro and parsley; chopped
    • OPTIONAL:
    • kidney beans
    • chick peas
    • other beans


    Instructions


    1. Whisk together the mustard and vinegar. Whisk in the olive oil & stir in all seasonings.
    2. Toss together all other ingredients and pour sauce over top and blend well.
    3. This will keep in the fridge for 3-4 days and tastes better after sitting at least 1 day.
