SALADS: Bean Corn and Cilantro Salad

List of Ingredients
- 1 Tbls. dijon mustard
- 3 Tbls. red wine vinegar
- 1/4 cup olive oil
- salt, pepper, cayenne and chili powder to taste
- 3 scallions, diced
- 1 red bell pepper diced
- 1 can black beans, drained and rinsed
- 1 can corn
- handful of cilantro and parsley; chopped
- OPTIONAL:
- kidney beans
- chick peas
- other beans
Instructions
- Whisk together the mustard and vinegar. Whisk in the olive oil & stir in all seasonings.
- Toss together all other ingredients and pour sauce over top and blend well.
- This will keep in the fridge for 3-4 days and tastes better after sitting at least 1 day.
