    CAKES: Carrot Cake & Cream Cheese Frosting

    List of Ingredients

    CAKE:
    4 Eggs, beaten
    2 Cups Flour
    1 Cup Sugar
    1 cup brown sugar
    1 Tsp. Cinnamon, ground
    2 Tsp. Baking Powder
    1/2 Tsp. Baking Soda
    3/4 Cup Oil
    3 Cups Carrots, grated
    1/2 Cup walnuts,(optional

    FROSTING:
    1 8 oz pkg cream cheese, softened
    1/2 cup soft butter
    2 tsp vanilla
    5 1/4 - 6 1/4 cups powdered sugar (remove lumps)

    Recipe

    CAKE:
    Set oven to 350 degrees.
    Grease & flour 2 9" round pans.
    In a large bowl, mix the dry ingredients and set aside.
    In a medium bowl mix the carrots, oil and eggs, add to the dry ingredients, adding in the nuts.
    Pour batter into pans and bake for 30-35 minutes.
    Let cool on a rack for 10 minutes.
    Remove from pans and cool completely

    FROSTING:
    Beat the cream cheese and butter till smooth, add vanilla & powdered sugar amd beat until smooth and thick.
    Spread on and in between layers of cake
