COOKIES: Caramel Cream Sandwich Cookies

1 cup butter
3/4 packed cup brown sugar
1 egg yolk
2-1/4 cups flour
Brown Butter Frosting:
2 TBL butter
1-1/4 cup confectioners' sugar
1/2 tsp. vanilla

Cream 1 cup butter or margarine. Gradually add the brown sugar, creaming until light and fluffy. Blend in the egg yolk. Add flour and stir until mixture forms a dough. Chill, put not for too long.
Roll dough into small balls about the size of a walnut. Place on ungreased cookie sheet and flatten a bit with a fork.
Bake (325°F) 9 to 12 minutes until cookies begin to brown very lightly. Remove from sheets while warm.Cool completely. Place flat sides of two cookies together with bron butter frosting, sandwich style.
Browned Butter Frosting:
Brown butter or margarine in saucepan. Remove from heat and blend in the confectioners' sugar. Gradually add vanilla and the 4 (may need 5) tsps. cream until of spreading consistency.
