    MAIN DISHES: Apricot Pork Roast

    4-5 lb roast
    Marinade:
    1/2 cup soy sauce
    1 tsp. ginger
    2 cloves garlic, minced
    1/2 cup sherry
    2 Tbls. dry Mustard
    2 tsp. thyme

    Roast topping:
    1 small jar Apricot Jam
    2 tsp/ sherry
    1 Tbls. soy sauce

    Recipe



    Mix all marinade ingredients together.
    Pour over the roast & marinate over night.
    Pour off marinade
    Roast, uncovered on a rack 2 - 2 1/2 hours until internal temps reach 160 degrees.
    Meanwhile on a stove top mix the jar of jam with 2 tsp. sherry & 1 Tbls. soy sauce.
    Heat thru and serve over the roast.
