    MAIN DISHES: Mexican Pork Tortilla Supper

    List of Ingredients


    • Filling:
    • 1 medium onion; chopped
    • 2 tsp oil
    • 1 clove garlic; minced
    • 1/2 lb boneless pork chops cut into 1/4" cubes
    • 1 14oz can stewed tomatoes
    • dash of pepper
    • 1 16oz can refried beans
    • 1 tsp. chili powder
    • 1/4 tsp red pepper sauce
    • Sauce:
    • 3 Tbls flour
    • 3 Tbls. butter
    • 1/2 tsp. each salt & dry mustard
    • dash of cayenne pepper
    • 1 1/2 cups milk
    • Additional Ingredients:
    • 1 10 pk small flour tortillas
    • 1 1/4 cup shredded Cheddar Cheese


    Instructions


    1. In a non stick skillet over medium heat, saute the onions and garlic in oil. Add the prk cubes.

    2. Cook and stir until pork is no longer pink.Add in the tomaotes and pepper & stir all together.

    3. Spoon the refried beans into the pan and add the chili powder & red pepper sauce; stirring well.

    4. Simmer all together for 7 minutes, stirring occasionally to avoid sticking.Set aside.

    5. For Sauce:

    6. Melt butter obver medium heat in a 1 1/2 qt saucepan. Add the flour and seasonings; stir. Blend in the milk and cook over medium heat till thick.

    7. ASSEMBLY:

    8. Spread roghly 1/3 cup filling down the center of a tortilla. Fold over each side and place sema side down in a 9x13 pan.

    9. Make a row of tortillas, placing the last 2 across the top of the row.

    10. Pour the white sauce over the tortillas and spread evenly with the back of a serving spoon.

    11. Garnish the dish with 1 1/4 cup shredded Cheddar and a dash of paprika.

    12. Place in a 300 degree oven for about 10 minutes until the cheese melts and sauce is bubbly.

    13. Serves 4-8

    14. Garnish with sour cream & salsa at the table.
