MAIN DISHES: Mexican Pork Tortilla Supper

List of Ingredients
- Filling:
- 1 medium onion; chopped
- 2 tsp oil
- 1 clove garlic; minced
- 1/2 lb boneless pork chops cut into 1/4" cubes
- 1 14oz can stewed tomatoes
- dash of pepper
- 1 16oz can refried beans
- 1 tsp. chili powder
- 1/4 tsp red pepper sauce
- Sauce:
- 3 Tbls flour
- 3 Tbls. butter
- 1/2 tsp. each salt & dry mustard
- dash of cayenne pepper
- 1 1/2 cups milk
- Additional Ingredients:
- 1 10 pk small flour tortillas
- 1 1/4 cup shredded Cheddar Cheese
Instructions
- In a non stick skillet over medium heat, saute the onions and garlic in oil. Add the prk cubes.
- Cook and stir until pork is no longer pink.Add in the tomaotes and pepper & stir all together.
- Spoon the refried beans into the pan and add the chili powder & red pepper sauce; stirring well.
- Simmer all together for 7 minutes, stirring occasionally to avoid sticking.Set aside.
- For Sauce:
- Melt butter obver medium heat in a 1 1/2 qt saucepan. Add the flour and seasonings; stir. Blend in the milk and cook over medium heat till thick.
- ASSEMBLY:
- Spread roghly 1/3 cup filling down the center of a tortilla. Fold over each side and place sema side down in a 9x13 pan.
- Make a row of tortillas, placing the last 2 across the top of the row.
- Pour the white sauce over the tortillas and spread evenly with the back of a serving spoon.
- Garnish the dish with 1 1/4 cup shredded Cheddar and a dash of paprika.
- Place in a 300 degree oven for about 10 minutes until the cheese melts and sauce is bubbly.
- Serves 4-8
- Garnish with sour cream & salsa at the table.
