    List of Ingredients




    1 1/2 lbs stew meat cut into 1" pieces
    1 1/2 Tbls. Oil
    1 large onion; chopped
    1 16 oz can tomatoes; drained and chopped coarse
    1/2 cup beef broth
    1/2 cup dry sherry or red wine
    1/2 tsp salt
    1/4 tsp pepper
    2 large potatoes; peeled and cubed
    2 ears of corn. quartered
    1 16 oz can peach halves; drained

    Recipe



    In a Dutch Oven, brown the meat in the oil.
    Add onion & stir often until lightly browned.
    Stir in the tomatoes and broth, 1/4 cup wine, salt & pepper.
    Bring to a boil, reduce heat, cover and simmer for 40 minutes.
    Stir in potatoes and remaining wine.
    Cook 10 minutes.
    Add the corn and cook an additional 5 minutes.
    Stir in the peaches, and cook 3 minutes or until meat is fork tender and veggies are crisp tender & peaches are warmed.
    4 Servings
