    PIES: Walnut Pie with Cranberry Cream

    List of Ingredients




    Pie Crust:
    1 cup flour
    2 Tbls. granulated sugar
    1/2 cup butter
    1 egg, slightly beaten

    Walnut FIlling:
    3 eggs
    1 cup packed brown sugar
    1 cup golden corn syrup
    1/4 cup butter; melted
    1 tsp. vanilla
    1/4 tsp. salt
    1/4 ysp. ground cinnamon
    2 cups walnuts, toasted; coarsley chopped

    Cranberry Cream:
    1 cup Whipping Cream
    1/3 cup cranberry jelly. room temperature
    1-2 Tbls. orange flavoured liqueur (Cointreau)
    1/4 tsp. ground cinnamon

    Pie Crust:
    Place flour and sugar in a large bowl and rub in the butter, until mixture resembles coarse crumbs.
    Add egg and stir until a soft dough forms.
    Turn dough onto a lightly floured surface and knead very tightly, just intil dough is smooth.
    Roll pastry until large enough to fit into a non-greased 10" tart pan.
    Cover with plastci wrap and place ona baking dish.
    Chill for 1 hour.
    Preheat oven to 375 degrees.
    Line pastry with parchment paper and half fill with dried beans or rice.
    Bake on thebottom shelf of preheated oven for 15 minutes.
    Remove paper and beans. COOL.

    Walnut Filling:
    Whisk all ingredients exceot for the walnuts in a medium bowl until smooth.
    Stir in the walnuts.
    Pour filling into cooled pastry shell; smooth top.
    Bake on bottom shelf of preheated oven for 35 - 40 minutes, or until firm.
    Filling may be a bit wobbly in the center, but will set as cooling.
    Place ona wire rack to cool.
    Pie is good served warm or cold.

    Cranberry Cream:
    Whip cream in a medium bowl until soft peaks form.
    Fold in remaining ingredients.
