    List of Ingredients




    3 lbs. yellow squash
    1 large onion, chopped
    1/2 lb. bacon, cooked and crumbled
    1 can Creamy Chicken Mushroom Soup
    1/2 cup Sour Cream
    1 cup grated Sharp Cheddar Cheese
    1 large egg
    2 Tbls. butter
    2 sleeves crushed saltine crackers

    Recipe



    Preaheat oven to 350 degrees.
    Grease a casserole dish with butter.
    Slice and cook squash and onion in water until tender.
    Drain all the water, mashing in a colander to make sure all liquid is gone.
    Pour mashed squash into a large mixing bowl.
    Stir in the soup, sour cream, egg, butter, cheese and one sleeve of crushed saltines.
    Add salt and pepper to taste; mixing well.
    Pour into casserole dish and top with remaining crushed crackers.
    Bake for 30-40 minutes until lightly browned on top and bubbly.
