    SOUPS: Kartoffelsuppe (German Potato Soup)

    List of Ingredients

    2 onions, sliced
    4 Tbls butter
    1 leek, sliced
    1 small can mushrooms
    8 medium potaties, peeed and cut into chunks
    2 Chricken Broth Cubes
    7 Cups water
    4 tsp. seasoned salt
    2 tsp. onion powder
    1/2 tsp. black pepper
    4 carrots, sliced

    Recipe

    In a dutch oven pr heavy soup pot. cook onionsin 2 Tbls butter until nicely browned.
    Add the leeks, carrots, mushrooms, potatoes, broth cubes and water.
    Bring to a boil and cook on low for 25-30 minutes, or until veggies are tender.
    Cool slightly.
    Puree soup in batches in the blender.
    Return to thepot & add remaining 2 Tbls. of butter and reheat.
    Season with salt and pepper to taste.
    Serve with a loaf of warm crusty bread.
