SOUPS: Shrimp,Crab and Corn Chowder

List of Ingredients
6 slices bacon, fried crisp
4 Tbls. butter
1 small onion, chopped
1 Celery Rib, chopped fine
1/3 cup flour
3 cups milk
2 potatoes, unpeeled, diced
1 tsp. salt
3/4 tsp Black Pepper
1 tsp. Hot Pepper Sauce
1 Smoked Red Pepper , chopped
1 tsp. minced Garlic
1/2 tsp Liquid Smoke
2 tsp. Chicken Bouillon
2 cups frozen corn
1 cup half and half
1 can crab meat drained
1/2 pound shrimp, cooked and cut into bite size pieces.
1 Tbls Parsley Flakes

Crumble bacon and set aside.
Melt the butterin a heavy 2 qt sauce pan.
Add the onion and celery and cook till soft, 5-10 minutes.
Add the flour, cook stirring constantly 5 minutes.
It will be a think paste.
Slowly whisk in the milk, and stir until smooth..
Add potatoes, salt, pepper, hotsauce, smoked pepper, garlic, liquid smoke, bouillon, and corn.
Simmer over low heat, stirring often to avoid sticking, (Mixture will be thick)until portaoes are cooked.
Do not allow the soup to boil.
Add the half n half, brab meat, shrimp and bacon.
Cook till heated thru.
Add parsley, stir well and serve with oyster crackers.
NOTE:
I use pre-cooked bacon & pre-cooked shrimp.
Be sure to cut potatoes small enough to cook in a short time.
