    CAKES: White Christmas Cake

    List of Ingredients

    1-1/2 cups light raisins
    3/4 cup dates, pitted and chopped
    1 cup red and green candied cherries
    3/4 cup candied pineapple
    3/4 cup chopped Pecans
    1/2 cup coconut
    3 cups flour
    2 teaspoons baking powder
    1 teaspoon salt
    1 cup butter
    1-1/2 cups white sugar
    4 eggs
    1 teaspoon lemon rind, grated
    2 Tablespoons lemon juice






    Recipe

    Add prepared fruit & nuts to the flour and dry ingredients; mix well so all fruit is coated with flour.
    Cream butter with sugar & eggs; one at a time, beating well after each addition.
    Mix in lemon rind and juice.
    Add fruit/flour mixture part one at a time, combining well after each addition.
    Turn the batter into a prepared loaf pans and bake at 300 degrees 1 3/4 to 2 hours.
