    List of Ingredients




    Cupcakes:
    1/2 cup shortening
    1 1/2 cups white sugar
    1 cup buttermilk
    2 eggs
    1 teaspoon vanilla extract
    2 oz red food coloring
    1 tablespoon vinegar
    4 tablespoons cocoa
    1 teaspoon salt
    1 teaspoons baking soda
    2 1/4 cups sifted all-purpose flour

    Frosting:
    1 1/4 cups milk
    3 tablespoons of corn starch
    1 cup sugar
    1 cup shortening
    1 teaspoon vanilla

    Cup Cakes:
    Cream sugar and shortening.
    Add eggs and beat until fluffy.
    mix cocoa and food coloring together and add to the sugar mixture.
    Beat well.
    Mix flour and salt and add to the sugar mixture, alternating with the buttermilk and vanilla.
    Mix well.
    Add vinegar and soda and mix till well blended.
    Fill cup cake tins 2/3 full.
    Bake at 350 degrees for 18-20 minutes,
    Makes 18 cupcakes.

    Frosting:
    Mix cornstarch and 1/4 cup milk.
    Add remaining milk and cook pver medium heat until thick.
    Pour into a shallow dish, cover with saran wrap and refrigerate till cool.
    Cream sugar and shorteneing.
    Add vanilla and mix until very light.
    Add colled thickening a small amount at a time and continue mixing until consistency of shipped cream.
    Add food color to desired desired color.
    Froat and decorate as desired.
