    List of Ingredients


    • ¼ cup lemon juice
    • ¼ cup water
    • ½ cup sugar
    • 4 eggs yolks, well beaten
    • 1 tbsp unflavored gelatin
    • ¼ cup cold water
    • 1 baked pie shell
    • 1 cup bluberries, crushed
    • 4 egg whites
    • ½ cup sugar
    • 1 cup whole blueberries
    • ½ cup heavy cream, whipped


    Instructions


    1. Beat egg yolks, add lemon juice, water and ½ cup sugar. Cook in double boiler until thick.
    2. Add gelatin which has been softened in the cold water.
    3. Add crushed blueberries, chill slightly.
    4. Beat egg whites until stiff, adding ½ cup sugar gradually.
    5. Fold in whole blueberries, fold in egg yolk mixture, then fold in the whipped cream.
    6. Mound in baked pie shell, chill until set. Decorate with whipped cream.
