    Chocolate Zucchini Cake


    List of Ingredients


    • 2½ cups flour
    • ½ tsp baking powder
    • 1 tsp cinnamon
    • ¼ cup margarine
    • 1¾ cups sugar
    • 2 cups grated zucchini
    • ½ cup sour milk/buttermilk
    • ½ cup chopped walnuts
    • ¼ cup cocoa
    • 1 tsp baking soda
    • ½ tsp cloves
    • ½ cup oil
    • 2 eggs
    • 1 tsp vanilla
    • ¼ cup chocolate chips


    Instructions


    1. In a large mixing bowl, combine margarine, oil and sugar. Add eggs and mix well.
    2. Stir in zucchini and vanilla.
    3. Add dry ingredients alternately with milk. Stir in chocolate chips and walnuts.
    4. Turn into greased 9x11 or 11x13 pan. Bake at 350F for 35 to 40 minutes.
    5. Variation: Spoon batter into prepared muffin pans filling 2/3 full. Bake 20 to 25 minutes. Makes 24.
