Lemony Cranberry-Coconut Squares

- 2 cups flour
- ½ cup sugar
- 1/8 tsp salt
- ½ cup margarine
- 2 tbsps flour
- 1 tsp baking powder
- ¼ tsp salt
- 3 eggs
- 2 cups sugar
- 1/3 cup lemon juice
- 2 cups fresh or frozen cranberries
- 2 cups shredded sweet coconut
Instructions
- Stir together 2 cups flour, ½ cup sugar and 1/8 tsp salt.
- With 2 knives, cut in until crumbly margarine. Evenly press into bottom of greased 9 x 13-inch pan.
- Bake at 350F until golden, about 20 minutes.
- Meanwhile in a small bowl, using a fork, stir together 2 tbsp flour, 1 tsp baking powder, ¼ tsp salt.
- In a large bowl, whisk together 3 eggs, 2 cups sugar, 1/3 cup lemon juice.
- Whisk in flour mixture until blended. Stir in cranberries and coconut.
- Pour over hot baked crust. Reduce heat to 325F. Bake until centre is set and edges are golden about 45 to 50 minutes.
