    BANANA BREAD

    List of Ingredients

    2-3 c. peeled, mashed bananas
    ½ c. canola oil
    ½ c. white granulated sugar
    ½ t. Pure Vanilla Extract
    4 large eggs
    1 t. cinnamon
    1/2 t. lemon peel (optional)
    large pinch of nutmeg
    small pinch of ground cloves
    ½ c. chopped walnuts or pecans (optional)
    3 c. All-Purpose Flour
    ½ t. baking soda
    3 t. baking powder
    ¼ t. salt (optional)
    Cooking Spray or paper baking muffin cups


    Recipe

    Preheat oven to 350*F
    In a large glass bowl, blend bananas on high for 20 sec.
    Add the oil and sugar, blend on high for 20 sec.
    Add vanilla, blend well on high for 10 sec.
    Add each egg, one by one, and blend on low for 10 sec. after each addition.
    If this is not adequate to mix in egg, try stirring with beaters in between blending cycles....just be sure not to overbeat!
    STIR in spices and nuts, using beaters or rubber spatula.
    SIFT flour, baking soda, baking powder, and salt.
    Blend on low for 30 sec., stopping occasionally to stir with rubber spatula or beaters.
    Be sure to get oil that may have settled on bottom of bowl or clung to sides, mixed in very well.
    Spray loaf pans (on all bottom & 1 inch up sides, then wipe down all with paper towel), or line muffin cups in muffin pan. Fill either 2/3 full.
    Bake in middle of oven for approximately: 45 min. for 2 large-medium loaves; 30 min. for 6-8 mini loaves; 20 min. for muffins.
