COCONUT SHRIMP

1 1/2 lb large raw shrimp
1/2 C flour
1/2 C corn starch
1 Tbsp salt
1/2 Tbsp white pepper
2 Tbsp vegetable oil
1 C ice water
oil for frying
2 C flaked coconut

Recipe
Peel, devein & wash shrimp, dry well on paper towels.
In a large bowl combine flour, corn starch, salt, pepper, vegetable oil and ice water; mix well.
Heat oil in a large skillet to 350-degrees. Spread coconut in a shallow pan, adding more as needed.
Dip shrimp in batter & roll in coconut. Fry to golden, about 4 minutes.
Bake @ 300 for 5 minutes to finish cooking shrimp. Serve with Dipping Sauce.
DIPPING SAUCE
1/2 C orange marmalade
1/2 Grey Poupon, country style
1/4 C honey
3-4 drops Tabasco
Combine all ingredients & chill for at least 1 hour.
