TILAPIA WITH CAPERS & ALMONDS

This sauce is so good I usually double the recipe!
List of Ingredients
2 tablespoons slivered almonds
1 1/4 pounds tilapia (or sole) fillets
3 tablespoons flour
1 tablespoon olive oil
1/8 teaspoon salt
1/8 teaspoon pepper
1/2 white wine
1 1/2 tablespoons fresh lemon juice
2 tablespoons drained capers
1 tablespoon butter
Recipe
Put almonds in small skillet on medium heat. Set timer for 4 minutes. Remove pan from heat and let nuts continue to toast stirring occasionally.
Dredge fish in flour. In large non-stick skillet heat 1 1/2 teaspoons olive oil over medium heat. Cook half of fish about 2 minutes per side or until done. Season with salt and pepper and remove from pan and keep warm. Repeat with remaining oil and fish.
Add wine to pan and boil until reduced by half. Add lemon juice, capers and butter stirring until butter has melted. Pour over fish and garnish with almonds.
