CREAMY CHICKEN & RIGATONI

List of Ingredients
1 T. vegetable oil
2 c. whipping cream
1 lb. chicken breast cut into 1-inch pieces
1/2 t. salt
2 cloves garlic, finely chopped
1/2 t. pepper
2 t. basil
1/4 t. cayenne pepper
2 t. oregano
1 pkg. rigatoni pasta
2 cans (14 1/2 oz) diced tomatoes, well drained
Shredded Parmesan cheese (optional)
1 pkg. frozen broccoli, red pepper onions and
Mushrooms thawed and drained, or use fresh veggies.
Recipe
Heat oil in skillet over medium/high heat. Cook chicken, garlic, basil and oregano in oil about 5 minutes, stirring frequently until chicken is no longer pink. Stir in tomatoes, cream, salt and peppers. Heat to boiling and then reduce heat to low. Simmer uncovered about 10 min. or until slightly thickened. Cook and drain rigatoni as directed on package. Stir in rigatoni and veggies into chicken mixture; cook until hot. Serve with cheese on top.
