boneless chicken breasts (1 per person)
chicken coating, extra crispy or spicy (to taste)
egg and milk, mixed
lettuce
vegetables
ranch dressing
Recipe
Coat chicken breasts with egg and milk mixture, then dip into chicken coating. Coat back and forth until chicken is coated to desired thickness. Fry in vegetable oil on low heat, turning chicken as needed. Cook 10 minutes or until chicken is cooked through. Meanwhile, create indiviual salad plates, using lettuce, vegetables and croutons (optional). Remove chicken from pan and pat dry on paper towels. Cut up chicken and distribute among the salads. Add ranch dressing and serve. Good with soft breadsticks.
