    PASTA SALAD

    List of Ingredients

    3 oz fettucine, broken
    1 (8 oz) pkg cheese tortellini
    Cook according to package directions until al dente. Drain, rinse in cold water to cool. Set aside after tossing with Small amount of oil if desired.

    2 C fresh snow peas
    2 C small broccoli florettes
    2 1/2 C cherry tomatoes
    2 C fresh mushrooms, sliced
    1 (7 3/4 oz) can pitted ripe olives
    1 TBS grated Parmesan cheese
    Sliced pepperoni if desired (for main dish)

    Dressing:
    1/3 C red wine vinegar
    1/3 C vegetable oil
    1/3 C olive oil
    1 1/2 tsp Dijon mustard
    1/2 C sliced onion, cut in half and separated.
    2 TBS fresh chopped parsley
    2 cloves garlic. minced
    2 tsp dried basil leaves
    1 tsp dried dill weed
    1/2 tsp oregano
    1 tsp salt
    1/2 tsp pepper
    1/2 tsp sugar
    Place in container with secure lid and shake vigorously. Pour over salad and toss.

    Recipe

    Drop snow peas in boiling water, boil one minute, remove, drain, place in cold water, drain when room temp.
    Drop broccoli in boiling water, boil for 1 minute, remove, drain, place in cold water, drain when room temp.
    Combine all vegetables. Cook pasta. Combine pasta, vegetables and cheese. Toss with dressing and chill.
