    JO'S VEGETABLE STEW

    List of Ingredients

    2 tsp chicken broth mix or 2 bouillon cubes
    1-2 large onions, chopped large
    1-2 large zucchini, sliced
    3 large yellow summer squash, sliced
    3 stems celery, 1/2 inch slice
    1-2 Green bell pepper (or one green nd one red), cut in 3/4" squares
    3 carrots, sliced
    2 (1 lb) cans tomatoes with liquid, shredded.
    2-4 cloves garlc, minced
    1 1/2 tsp ground coriander
    1 tsp sugar
    Salt and pepper to taste
    1/2 - 1 C water as needed

    Recipe

    Slice vegetables straight, at angle, with wavey slicer, etc. for interest. Mix all but salt and pepper into Dutch oven. Cover and bring to boil, reduce to simmer, stirring occassionally, until carrots are tender (about 20-30 minutes). Adjust seasoning with salt and pepper.

    Serve as-is as a side dish with meat or seafood. Top with shredded Swiss or Monterey Jack cheese in single serving dishes, melt cheese under broiler, for side dish or luncheon entree.
