    VEGETABLE BEEF SOUP

    List of Ingredients

    3 lbs. beef shank
    1 1-pint 2 oz. can tomato juice
    1/3 cup chopped onion
    4 tsp. salt
    2 tsp. Worcestershire sauce
    1/4 tsp. chili powder
    2 bay leaves
    1 1-lb. can (2 cups) tomatoes
    1 cup diced celery
    1 8 oz. can whole corn
    1 cup sliced carrots
    1 cup diced potatoes
    1 10 oz. pkg. frozen lima beans (baby)

    Recipe

    Combine meat, tomato juice, onion, seasonings and 6 cups water. Cover, simmer 2 hours. Cut meat from the bone, strain broth and skim fat off. Add meat and vegetables to broth. Cover and simmer 1 hour.
