    TOMATO BASIL PIE

    List of Ingredients

    9 inch pie crust, baked, sprinkle ½ cup mozzarella on crust bottom when it comes out of the oven and let melt.
    5-6 Roma tomatoes or 4-5 regular tomatoes, cut into chunks, let sit in strainer to drain.
    fresh basil cut chiffonade (roll up a handful of leaves into a tight roll and cut really thinly).
    chopped garlic



    Recipe

    Mix tomatoes, basil, garlic and stir occasionally to mix and allow tomatoes to drain.

    MIX
    ½ cup mayo
    ½ cup parmesan cheese
    1 cup mozzarella
    Pour drained tomatoes into pie crust.
    Spread cheeses on top – spread out with fingers.
    Bake 375º till crispy and bubbly on top.
    Eat hot or cooled to room temperature. Reheats well in microwave.
