    Lassi

"The Best of Lord Krishna's Cuisine"

    Recipe Introduction

In addition to being delicious and icy-sort of an East Indian milk shake-lassi also functions as a mouth-saving balm during a spicy Indian meal. To create an Indian-style lassi you simply add sweeteners, spice, fruit, juice, herbs to a base of yogurt, buttermilk, or milk, followed by a generous helping of ice. This recipe is a good one to start with.

    List of Ingredients

    2 cups vanilla yogurt
3 Tbs. sour cream, cream, or half-and-half
1/4 cup trimmed fresh mint, loosely packed
1 tsp. dry-roasted fennel seeds, coarsely powdered
1/2 cup superfine sugar or equivalent sweetener
    1/2 Tbs. rose water
    1/4 cup ice water
    8 ice cubes, cracked (8 to 10)
4 sprigs fresh mint or rose petals for garnishing

    Recipe

Combine all of the ingredients, except the ice cubes and garnish, in a blender or food processor fitted with the metal blade, cover, and process for 2 minutes. Add the ice and process for another minute. Pour into frosted glasses and garnish with fresh mint or rose petals.

    Serves 4.
