    Asparagus Tortino

    1/4 lb. asparagus
    1 large egg
    Cream
    Salt & freshly ground pepper

    Recipe

    A tortino is an omelet that's more asparagus than egg.

    Sauté 1/4 pound thinly sliced asparagus in butter in an 8-inch nonstick pan until just tender.

    Beat an egg with a little cream, season to taste.

    Pour egg mixture over the asparagus and cook just until the egg has set.
