Assorted Greens Wilt

Greens - collard, mustard, kale, dandelion, turnip and Swiss chard.
SERVES: 4
List of Ingredients
1/2 tbsp. salad oil
1/2 cup white wine vinegar
1 tsp. Dijon mustard
2 small thin-skinned potatoes, cooked, peeled and sliced
2 slices bacon, cut into 1/2" pieces
2-1/2 cups mustard or turnip greens, torn
Salt and Pepper
Recipe
Stir together oil, vinegar and mustard. Mix half the dressing with potatoes; cover and refrigerate for 2 to 4 hours.
Shortly before serving, cook bacon in a large frying pan over medium heat until crisp.
Combine potatoes and greens: drain bacon and add to bowl.
Heat remaining dressing to a boil. Pour hot dressing over greens. Season with salt and pepper. Serve at once.
