    Bacon and Tomato Stuffed Quesadillas

    6 tortillas
    1 cup shredded cheddar cheese
    1 cup shredded pepper Jack cheese
    12 strips bacon, cooked crisp and crumbled
    1 large hot house tomato, diced
    1 ripe avocado, peeled and cut into thin wedges
    1 (2.2-oz.) can sliced ripe olives, drained
    Salsa and chopped fresh cilantro

    Place 2 tortillas in a large skillet over medium heat. Place equal amounts of cheeses, bacon, tomato, avocado and olives on half of each tortilla; fold over. Cook for several minutes per side or until cheese is melted and tortilla is crisp. Repeat with remaining tortillas. Serve with salsa and chopped fresh cilantro.

    Makes 6 quesadillas.
