Beer Batter Onion Rings

Oil for frying
1-1/4 lb. sweet yellow onions, such as Maui or Vidalia
2-1/2 cups Bisquick baking mix
1-1/2 tbsp. cornmeal
1/4 tsp. salt plus extra for topping
1 (12-oz.) bottle good-quality beer
Recipe
Pour oil into a large, deep pot and heat until very hot. (A few small drops of water in the oil will pop when it's hot.) Trim ends from onions. Peel and cut into 3/4-inch-thick slices. Separate into rings, discarding the inner section. In a medium bowl, stir together baking mix, cornmeal, salt and beer with a fork. Dip onion rings into batter and turn to coat well. Drop into hot oil and cook for 2 minutes or until golden brown. Turn and fry for 2 minutes more. Remove from oil and drain well on paper towels. Sprinkle with salt, if desired. Serve warm. (May be made an hour or so ahead, then reheated in a 425°F oven until hot, about 5 to 10 minutes.)
Makes about 50 onion rings.
