1/2 cup butter, at room temperature
3 squares Bakers Unsweetened Baking Chocolate, melted (or 9 tbsp. unsweetened cocoa powder and 3 tbsp. melted butter)
2 eggs (or 1/2 cup egg substitute)
1 tsp. vanilla extract
1 cup buttermilk (or 1 tbsp. lemon juice and milk to make 1 cup)
1-3/4 cups flour
1 cup sugar (or 1 cup brown sugar)
1/2 tsp. baking powder (or 1/4 tsp. baking soda and a pinch of cream of tartar)
1/2 tsp. baking soda
1/4 tsp. salt
3/4 cup chocolate chips
1/3 cup dried cherriesRecipe
Preheat oven to 375°F. Spray 12 muffin tins with nonstick cooking spray or line with paper wrappers; set aside. Beat butter in a medium bowl until fluffy. Add chocolate, eggs and vanilla. Beat until well combined; stir in buttermilk. Combine dry ingredients then add to bowl with chocolate mixture, mixing just until no lumps remain. Stir in chocolate chips and dried cherries. Spoon into prepared muffin tins and bake for 20 to 25 minutes or until a wooden skewer comes out clean when inserted into the center.
Makes 12 muffins.
