4 English muffins, split
4 large thin slices ham, cooked
4 eggs, poached
Hollandaise SauceRecipe
Cook ham and have ready. cook eggs in egg poacher until of desired doneness. Toast and butter split English muffins. Top each muffin with cooked ham slice, then poached egg. Generously spoon hallandaise sauce on top. Garnish with parsley sprigs. Serves 4.

Hollandaise Sauce
3 egg yolks
1/2 cup butter or margarine, melted
3 tbsps. hot water
1 1/2 tbsps, lemon juice
Dash cayenne
In top of double boiler with wire whish, beat egg yolks until smooth. (Boiler should not touch water inpan below) Slowly stir in butter. Gradually add hot water, beating constantly. Stir in seasonings and lemon juice. cook until thick. cover and keep hot over water until serving time. Reheat over hot water if necessary.
