8 dried apricot halves
1 cup water
2 cups sugar
1 teaspoon salt
2 tablespoons butter
1 teaspoon vanilla
1/4 cup Chopped almonds
1 cup shredded coconutRecipe
Cook apricots in water until soft. Add sugar, salt and butter. Cook to soft ball stage, 234 to 236-degrees. Add vanilla; cool to lukewarm stage. Add almonds; beat until thick and creamy. Drop by teaspoonfuls into coconut. Cool on waxed paper.
Makes 18 pieces.
