Southwestern Chicken Hash

List of Ingredients
6 oz. canola oil
2 lbs. chicken breast, cooked, diced
4 ribs of celery, diced
1 large onion, diced
6 oz. green chilies
2 each/per serving fried eggs
1/2 tsp. chili powder
1/2 tsp. cilantro
1/2 tsp. cumin
1/2 tsp. old bay
1/2 tsp. salt
3 cups potatoes, diced or shredded and brownedRecipe
Over medium/high heat saute the chicken, celery, onions, potatoes in the canola oil until hot and crispy. Mix in the green chilies. Then mix the seasonings together and sprinkle over the mixture...you can determine how spicy you want it. Add a little or a lot of the seasoning.
Pan fry eggs over easy. Place on tope of each serving.
