Carrot Sandwich Cookies

List of Ingredients
1/3 cup Smart Balance Buttery Spread or butter, softened
1/4 cup brown sugar
1/4 cup sugar
1 egg
3/4 tsp. imitation maple flavor, divided
1-1/4 cups whole wheat pastry flour
1/2 tsp. baking soda
1/2 tsp. salt
1 cup shredded carrots
1/2 cup chopped walnuts
6 oz. cream cheese, softened
1-1/2 tbsp. honeyRecipe
1. Preheat oven to 375°F and spray cookie sheets with nonstick cooking spray.
2. Beat together buttery spread, sugars, egg and 1/2 tsp. maple flavor until creamy.
3. Add flour, baking soda and salt; stir until well blended.
4. Stir in carrots and walnuts.
5. Drop batter by tablespoons 2 inches apart on prepared cookie sheets, flattening slightly. You should have about 16 cookies.
6. Bake for 10 to 12 minutes or until lightly browned and springy to the touch; let cool.
7. Blend cream cheese with honey and remaining 1/4 tsp. maple flavor. Spread equal amounts of filling onto 8 cookies; top with remaining cookies.
8. Wrap individually and store in the refrigerator for up to 4 days.
Makes 8 sandwich cookies.
