    2 slices white bread
    2 cups skim milk
    2 large eggs
    2 tbsp. Sugar Twin
    1 tsp. maple flavoring
    1 tsp. orange extract
    1/2 tsp. ground nutmeg
    1/2 tsp. salt

    Recipe



    Preheat oven to 325°F. Cube bread and place in a 1-quart casserole. Scald milk on top of the stove. In a small bowl, whisk together eggs, Sugar Twin, maple flavoring, orange extract, ground nutmeg and salt. Slowly add scalded milk to egg mixture and stir well. Pour into casserole. Bake for about 1 hour in a pan filled with hot water that comes halfway up the sides of the casserole. To test for doneness, insert a knife near the edge of the casserole; knife should come out clean. Remove casserole from hot water bath; let stand for a few minutes to cool. Spoon into 4 dessert dishes.
    Makes 4 servings.


    Nutrition Per Serving: 114 calories, 8 g protein, 3 g fat, 13 g carbohydrate, 108 mg cholesterol, 307 mg sodium.

    Diabetic exchanges: 1/2 lean meat + 1 carbohydrate (or 1/2 bread/starch + 1/2 nonfat milk)
