No-Cheese Cheesecake

1 lb firm tofu, well drained
1 large ripe banana, peeled and sliced
5 large egg whites
3 tablespoons corn syrup
1 tablespoon lemon juice
1/8 teaspoon grated lemon rind
1 can (6 oz) crushed pineapple, well drained*
1 cup canned blueberry pie filling*
1/4 cup chopped macadamia nutsRecipe
Preheat electric oven to 300 F. To a blender, add tofu and banana; blend until smooth. Place tofu mixture in large bowl of electric mixer. Add egg whites and mix on low speed. Add corn syrup, lemon juice, rind, and pineapple; continue mixing until just blended. Pour into a 9-inch non-stick baking pan and place pan in a 13 x 9 x 2-inch pan filled with water to a depth of 1/2 inch. Bake for 45 minutes. Chill several hours or overnight before serving. To serve, top with blueberry pie filling and nuts. Makes 12 servings.
