Pinacbet (Mixed Vegetable Dish)

4 long eggplants
2 long bittermelons
1/4 lb sweet peppers
1/4 lb fresh or frozen okra
1/4 lb long beans
3 cups water
1/4 cup patis (fish sauce)
3-inch piece ginger root, crushed
1 cup fresh or frozen lima beans
2 medium tomatoes, chopped
Salt to tasteRecipe
Make lengthwise slit in eggplants and bittermelons, cut in 3-inch pieces. Remove seeds from bittermelons. Slit peppers. Cut off and discard okra stems. Cut long beans in 3-inch lengths. In a large sauce pot, bring the water to a boil. Add patis, ginger, lima beans, and tomatoes; cover and cook on medium-high for 10 minutes. Add the eggplants, bittermelons, sweet peppers, okra, and long beans. Cover and cook for 15 more minutes, or until vegetables are tender, occasionally tossing vegetables in pot. Add salt if needed. Makes 6 servings.
