    Prep time: 10 minutes, Cook time: about 15 minutes

    List of Ingredients




    1 tbsp. paprika
    1/2 tbsp. salt
    1/2 tbsp. onion powder
    1/2 tbsp. cayenne pepper
    1/2 tbsp. white pepper
    1/2 tbsp. black pepper
    1/2 tsp. dried thyme leaves
    1/2 tsp. dried oregano
    2 (5- to 8-oz.) catfish fillets, rinsed and patted dry
    6 tbsp. unsalted butter or olive oil, divided
    Lemon wedges (optional)

    Recipe



    Stir together all seasonings in a small bowl. Coat fillets liberally on both sides with seasoning mixture. Place a large cast iron skillet over medium-high heat for 2 to 3 minutes. Add 3 tbsp. butter in pan and immediately add one fillet. Cook for about 3 to 5 minutes per side or until fish is opaque. Repeat with remaining butter and fillets; serve with lemon wedges, if desired. Makes 2 servings.
