Honey Orange Game Hens with Vegetable Rice Stuffing -

4 Cornish game hens, halved
2 oranges, each cut into 8 wedges
1/2 cup each: honey and melted butter
2 tbsp. finely chopped fresh rosemary
Salt and freshly ground pepper to taste
Vegetable Rice Stuffing (recipe follows)Recipe
Preheat oven to 375°F. Place game hens on a large baking sheet and tuck 2 orange wedges under each. Stir together honey and butter and brush mixture over the top; sprinkle with rosemary and season with salt and pepper. Bake for 1 hour or until game hens are cooked through.
Serve over Vegetable Rice Stuffing:
Bring 4½ cups water, 1 (16-oz.) package Hinode White & Wild Rice and 2 tbsp. each: butter and Better than Bouillon Chicken Base to a boil in a large saucepan. Cover and simmer over low heat for 20 minutes; remove from heat and let stand for 5 minutes. Meanwhile, melt 2 tbsp. butter in a large skillet. Stir in 1 (1.5-lb.) container Raley's Fresh Produce Stuffing Mix; cook and stir over high heat for 5 minutes, then drain excess liquid. Stir together rice and vegetables, then spoon onto a platter and top with game hens and oranges.
Makes 8 servings.
Tip: Steam 1½ lbs. trimmed fresh green beans and 1 sliced red bell pepper until crisp-tender. Season with salt and pepper and sprinkle with 1/2 cup toasted sliced almonds.
