Summer Rice Salad

3 tbsps. tarragon-flavored vinegar
1 tbsp. honey dijon mustard
1/4 tsp. salt
1/4 tsp. pepper
1/4 cup oil
1 lb. boneless skinless chicken breasts, cut in 1/4" wide strips
6 ounce white and wild rice mix
1 gala apple, cored and chopped
2 large ribs celerey, chopped
1/2 cup toasted pecan piecesRecipe
In bowl, mix tarragon flavored vinegar, honey dijon mustard, salt, and pepper. Whisk in oil. In large skillet, heat oil over high heat. Add chicken strips; aute 6 minutes, until lightly browned. Revomve to bowl; cover. In same skillet, prepare white and wild rice mix following package directions. Meanwhile, in large bowl, combine apple, celery, and pecan pieces. Add hot rice, chicken and dressing. Serve immediately.
