Warm Goat Cheese Salad With Pistachio An

1 log of fresh goat cheese
1 cup chopped toasted pistachio
1/2 cup pistachio oil
1/2 cup extra virgin olive oil
1 tsp sherry vinegar
2 tsp balsamic vinegar
1 lb mixed green salad (mesclum)
1/2 lb yellow beets
1/2 lb red beetsRecipe
For the beets: Wash beets under water then wrap them in aluminum foil, place them in the oven at 350ºF for about 1 hour or until tender ( use tip of a knife to see if its tender) Cool and peel beets. Slice the beets in wheels and set aside.
For the dressing: mix together balsamic vinegar and sherry vinegar with salt and pepper, add olive oil and pistachio oil while you are whisking, check seasoning.
For the goat cheese: toast pistachios in oven at about 350ºF for about 5 to 10 min or until there get a little coloration (blond). Cool and chop them coarsely. Cut the goat cheese log into 6 even slices and sprinkle pistachios on it . Press pistachios on cheese so it sticks to it on all the sides.
Presentation:
Warm goat cheese with beets in the oven for about 5 minutes and place the goat cheese wheel in center of the plate. Toss the beets in dressing and place around goat cheese so it's pleasing to the eyes. Toss salad in dressing and place on top of the goat cheese.
