Sweet Hot Monte Christo

1 tsp. sweet hot mustard
2 slices sourdough french bread
2 slics Muenster cheese
2 slices Canadian bacon
3 to 4 thin apple slices
2 eggs, lightly beaten
2 tbsps. low-fat milk
1 tbsp. butter or margarine
2 tbsps. maple syrup
Confectioners' sugar

Spread mustard evenly over one slice of bread. Top with 1 slice of the cheese, the bacon, applie slices; the second slice of cheese and the second slice of bread.
In shallow baking pan, combine eggs and milk. Dip sandwich into egg mixture; allow to soak for 2 minutes. Repeat on other side.
In a heavy skillet over medium heat, melt butter. Grill sandwich for 3 to 4 minutes per side or until the egg mixture has cooked and reached an internal temperature of 160 degrees.
Drizzle with maple syrup, sprinkle with confectioners' sugar and garnish with mint.
Makes 1 sandwich.
