Bean and Prawn Salad with Curry Dressing
Materials ( to serve 6)
300g baby green beans
30 cooked king prawns, peeled and deveined
1/2 bunch shallots, finely chopped
1/2 cup continental parsley, chopped roughly
1 garlic clove, crushed
1/2 cup of red wine vinegar
1 cup of olive oil
1 teaspoon of sugar
1/2 teaspoon of curry powder
Salt and pepper
1 Bring a pot of water to the boil, add salt and the beans. Cook
them for around 3 minutes. Drain and immediately plunge into
cold water. This will help retain the original green colouring.
2 Whisk together the garlic, vinegar, oil, sugar, curry powder,
salt and pepper in a bowl.
3 Toss the prawns, beans, shallots, parsley and dressing
together and serve.
